A good friend of mine sent me a set of recipes from Sri Lanka, so I decided tonight was the night to try a couple out. I really didn’t wait to long – she just sent them earlier today.
This recipe is a refreshing cucumber and onion salad that accompanies many curries quite well – I had mine alongside a green banana curry, Alu Kehel.
1 large or 2 small cucumbers, peeled and very thinly sliced
2 tsp salt
1/2 cup thick fresh coconut milk
1 fresh red chill, sliced
1 fresh green chili, clied
1 small onion, very thinly sliced
2 tbsp lemon juice
2 tsp salt

Sprinkle the salt over the cucumber and let sit for at least 30 minutes. Then remove excess liquid from the cucumber by pressing out the liquid. Mix cucumbers with remaining ingredients.
